For lunches at school, I can premake and plan out my lunches for the week. Easy Peasy!
These from the 'Bucks have two cage-free eggs, apple slices, grapes, multigrain muesli bread, cheese wedges, and honey peanut butter. I recreate mine and adjust a tad since our school is a peanut free school.
I adjust mine by substituting hummus or a hazelnut spread for the peanut butter. I stay with the egg, but usually just add one and not two. I will most likely have grapes in the house, but I will either add apple slices or some other fruit like strawberries. As for the cheese, I will use those Baby Bell cheese things if I find them on sale, string cheese, or cube cheese. In place of the bread, I love gluten free pretzels and may use rice cakes on occasion. Usually this depends mostly on what "spread" I have. And what's great...if you don't feel like boiling eggs, most grocery stores carry a single boiled egg, a 2 pack, or up to a 6 pack (that I've seen) ranging in price from $1-$3. I could make 5 school lunches in a snap!
